Soft Lemon Cookies Recipe
These soft sugar cookies get their flavor from fresh lemon juice and zest in the dough, making these a hit with everyone.
They also get a lemon glaze over the top of them for an extra punch of citrus and sweetness, and they only take about 30 minutes to make.
I discovered this recipe about a month ago, and they are my new favorite thing to bake. Everybody who has tried them said they were great, even those who don't like the flavor of lemon.
This recipe makes about 24 cookies, depending on how big you make them.

For The Cookies You Will Need
3 cups of flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter (softened)
1 1/4 cups granulated white sugar
1 teaspoon vanilla extract
2 tablespoons lemon juice
1 tablespoon lemon zest
1 large egg

2 cups confectioners sugar
3-4 tablespoons lemon juice
2 teaspoons lemon zest
